Shockingly, no dark leafy greens this week!
We got:
- 2 red bell peppers
- 4 jalapeno peppers
- Butternut squash
- Delicata squash
- One bag of adorable tiny eggplant “fairytale” eggplant
- One BIG bag of honey crisp apples
- One bag (~2 lbs) sweet potatoes
- One box of things that look like flowers that I have no idea what to do with and that shriveled up before I could use them or take a picture of them!
I want to make something that combines either sweet potatoes or squash with jalapenos–I think the spicy/sweet/earthy balance could be fun. Any suggestions?

Jamie Oliver’s chorizo and sweet potato soup – it’s even better when it’s spicy. You could easily leave out the chorizo, just google it for the recipe.

Chipotle Spiked Twice Baked Sweet Potatoes
- 1 large sweet potato, scrubbed clean
- 1-2 tbs chipotle sauce (or 1/2 – 1 chopped chipotle pepper)
~ 1 tsp butter
- Salt and pepper to taste
- 1 thin slice of prosciutto, thinly sliced
~ 2 tbs sour cream (1 tbs for the sweet potato mixture and one for topping)
Pepitas (pumpkin seeds) for topping
