  1. I thought white vinegar was just used for cleaning, not cooking.

  2. CS: So try the recipe with a number of different vinegars and use the one you like the best. I’m guessing that the broiling drives off a lot of the flavorful volatiles so there won’t be a lot of difference in using a white, cider or wine vinegars in the final product, except perhaps in color. If that’s the case, then it is just practical to go with the least expensive ingredient.

  3. Wasn’t being critical. Just that I didn’t recall ever seeing a recipe that actually used white vinegar. Then I recalled that there are some Mexican mole recipes where white vinegar plays a part — not sure what part, but a part. Like for reconstituting the chiles or something.
