All I Want for Christmas is Cookies: Chewy Ginger Cookies

Becks apologized to me as we were taking the elevator up to my apartment for Sunday’s cookie swap–she’d encountered some distractions while making her cookies, thought she might have left something out, and wasn’t sure the cookies would be any good.

Well, whatever mistakes Becks may have made in baking these, we hope she remembers, because the universal cookie party consensus was that these cookies rocked. I certainly went through the ones that were leftover at my house post-swap in record speed. Below, Becks’ attempt to reconstruct what she did:

3/4 c Shortening
1 1/4 c Sugar; divided
1 Egg
1/4 c Molasses
1 ts Vanilla extract
2 c All-purpose flour
1 1/2 ts Ground cinnamon
1 1/2 ts Ground ginger
1 ts Baking soda
1/2 ts Salt
1/2 ts Ground cloves

In a mixing bowl, cream shortening and 1 cup sugar. Add the egg, molasses and vanilla; mix well. Combine dry ingredients; add to creamed mixture and mix well. Roll into 1″ balls; roll in remaining sugar. Place 1-1/2″ apart on ungreased baking sheets. Bake at 375 degrees for 10 minutes or until lightly browned. Cool on wire racks. Store in an airtight container.
