CSA Week of September 13

Shockingly, no dark leafy greens this week!

We got:

  • 2 red bell peppers
  • 4 jalapeno peppers
  • Butternut squash
  • Delicata squash
  • One bag of adorable tiny eggplant “fairytale” eggplant
  • One BIG bag of honey crisp apples
  • One bag (~2 lbs) sweet potatoes
  • One box of things that look like flowers that I have no idea what to do with and that shriveled up before I could use them or take a picture of them!

I want to make something that combines either sweet potatoes or squash with jalapenos–I think the spicy/sweet/earthy balance could be fun. Any suggestions?

  1. Spicy squash soup?
    Or squashy chili?

  2. Jamie Oliver’s chorizo and sweet potato soup – it’s even better when it’s spicy. You could easily leave out the chorizo, just google it for the recipe.

  3. Just what the doctor ordered. Made it this week. Excellent
Chipotle Spiked Twice Baked Sweet Potatoes
    – 1 large sweet potato, scrubbed clean
    – 1-2 tbs chipotle sauce (or 1/2 – 1 chopped chipotle pepper)
    ~ 1 tsp butter
    – Salt and pepper to taste
    – 1 thin slice of prosciutto, thinly sliced
~ 2 tbs sour cream (1 tbs for the sweet potato mixture and one for topping)
    Pepitas (pumpkin seeds) for topping
